Fonseca Vintage Port, 2007 

Deep ruby almost inky colour. Very fruity with jammy forrest fruit, violets, liquorice, smoke and dark chocolate. Full bodied, rich with grippy yet ripe tannins and good freshness. Will continue to improve for another 15-20 years. Perfect with chocolate based desserts or blue cheese like roquefort or stilton.

Chateau Montrose,1995

Pale garnet colour with tawny rim. Complex nose of dried fruit, burned wood, leather, forrest floor, game and sweet spice. Silky smooth on the palate with fresh acidity and endless finish.
The wine is showing its full potential at the moment. Perfect wine for meditation and does not need any food but will complement lamb with root vegetables or hard aged cheese like comte, cheddar, manchego.

Dom Ruinart Blanc de Blancs, 2004

Deep yellow with gold highlights and very lively bubbles. Fresh nose dominated by ripe apples, citrus and melon followed by white pepper brioche and vanilla. Creamy palate with an citric edge. Very complex with good ageing potential. On its peak in 2008 but can hold easily for another decade.
Perfect with shellfish especially with fresh oysters.
